A role for a creative, passionate chef who enjoys autonomy and variety. A distinguished 4‑star hotel on the Cornish coast, known for exceptional food and warm, personal service, is seeking a Senior Chef to join our small, flexible kitchen team. This position is ideal for a calm, capable chef who thrives when trusted to work independently, enjoys creative menu involvement, and prefers the freedom of a light‑brigade kitchen without the pressures or politics of a large team.

Key Responsibilities


Production & Prep Leadership



  • Plan and manage weekly prep around the function diary and breakfast cover

  • Lead production for 2–3 weekly functions (approx. 20 covers each)

  • Maintain clear prep lists, labelling, date coding, and stock rotation

  • Control waste through accurate portioning and disciplined ordering


Event Delivery



  • Support menu design and costing for functions and private dining

  • Run functions confidently from prep through to service

  • Ensure consistent presentation, timing, and quality

  • Maintain strict allergen and dietary protocols


Breakfast Cover



  • Deliver breakfast service on the breakfast chef’s days off

  • Maintain pace, consistency, and agreed breakfast standards

  • Contribute to improving breakfast prep and mise en place


Standards & Compliance



  • Own day‑to‑day food safety including HACCP, logs, cleaning schedules, and temperature checks

  • Maintain allergen systems and compliant labelling

  • Uphold a clean, organised, audit‑ready kitchen at all times


Ordering & Cost Control



  • Support ordering and stock management based on functions and occupancy

  • Protect GP through costing, portion control, and monitoring waste

  • Assist with supplier relationships and product selection where appropriate


Teamwork & Communication



  • Act as a steady, senior presence in a small, supportive team

  • Train and support the breakfast chef and casual staff

  • Communicate clearly with front of house on timings, dietary needs, and last‑minute changes

  • Work with a solutions‑focused, calm approach
